tests: fsstress-gocryptfs.bash: sync up with EncFS

I have added a subset of fsstress-gocryptfs.bash to EncFS as
fsstress-encfs.sh, improving the code a bit.

This change forward-ports these improvements to
fsstress-gocryptfs.bash.
